3 Ingredient Baked Salmon for Tali (GF)

My beloved in-laws of blessed memory have their yearly yahrzeit within a two week period (albeit quite a few years in between) and the family remembers them at one gathering to tell stories of who they were and the impact they left upon our family. I was honored to host the event this time at our home and we had a bunch of surprises who showed up in the form of our soldiers – our grandson, son-in-law and 3 nephews – some in uniform, some not and this added some happiness to us all.

I was very happy to cook (a catharsis for me most times but especially now) and Yo brought a lovely lentil soup and Suze a cheesecake and I made an array of foods. I have, as I’ve mentioned numerous times, a few nieces and nephew and now a granddaughter who are either gluten intolerant or celiac so I’ve become much more aware of purchasing ingredients that are gluten free and have a super simple salmon recipe (I made 3 of ’em, big crowd) I threw together for my niece, among other goodies.

This is especially terrific since you literally can put it together 20 minutes before guests or your family is ready to sit down to eat as long as the oven is up to temp, no cheating. Every minute in the oven can make the difference between perfectly cooked and overdone.

So simply take your salmon fillet (I like preparing a big one as opposed to individual fillets, this way everyone helps themselves to the portion they want) and clean top and bottom

place on a piece of parchment paper on a rimmed baking sheet for easy cleanup and take your 2 other ingredients (I’m not kidding, this is it!)

these are the gluten free version and very tasty indeed! Now slather it generously on your salmon fillet.

Now turn your oven on to 400 F/200 C. I know I usually have you preheat your oven first but I deliberately am having you do it after the slathering so that your salmon will have time to marinate a bit in the sauces. Wait patiently till the oven is hot and place salmon fillet in and time for 18-20 minutes or till lovely and browned and cooked just right. A note. I loathe salmon that’s uncooked in the middle or rare (I eat sushi, it’s a different thing) so time it according to your preference. You like it rarer go for 15 minutes. That’s all folks! Serve plated or on a tray – lovely with fresh salad and boiled new potatoes with butter and salt. They’ll lick their fingers and ask for more.

1 large boneless salmon fillet with skin on

3 tablespoons thick teriyaki sauce (gf)

2 tablespoons sweet chili sauce (gf)

Directions:

Rinse the salmon, front and back. Pat lightly with paper towels. Trim ends of salmon if raggedy. Place salmon on parchment paper covered rimmed baking sheet.

Slather salmon with both sauces till covered completely. Preheat the oven to 400 F/200 C. Let salmon sit to marinate for about 15-20 minutes. By then your oven should have come to temperature. Place pan in oven and bake 18-20 minutes or till browned and cooked through. Remove promptly from oven. Salmon should be perfectly cooked. Serve on platter to delighted guests or plate as you prefer. Nice with salad and boiled new potatoes with butter and salt.
