Fast and Furious Chicken (or 4 ingredient Chix)
Summertime and the living is HOT! It’s hot outside people and when it’s hot, I find myself mildly to majorly crabby, depending how long I’m outside and roasting. So when the weather is like that, you don’t really wanna roast in the kitchen as well. Now I won’t lie, I’m blessed with air conditioning in my kitchen. So why crabby you might ask? Cuz I’ve already walked on my daily walk, gone back and forth to the office and picked up foodstuffs from shopping and you get frazzled.
This chicken recipe was born of I have no patience and just wanna get you in the oven already thoughts. BUT! it still has to taste good and please the crowds. So, after trying this out on the family a bunch of times (and hilariously, they loved it more than some of my more fussy dishes) I declared this a winner. Necessity being the mother of invention and all that jazz. You could just as easily call it 4 ingredient chicken (not including the chix themselves) and be done with it. So without any shame, I present this to you for those days you just are barely coping and wanna sorta fingerpaint the chix and pop in the oven.
Preheat the oven to 375 F/ 190 C. Gather the ingredients (4 I kid you not) and begin!
Take the washed and cleaned chicken pieces (I used chicken thighs here) and don’t even need to pat dry, just shake off the excess water and lay in a deep enough pan since this is a juicy chicken dish.
Now this is the fun part, all these bottles are squeeze bottles so like a mad painter, I squeeze/painted the chicken with all the ingredients like an abstract painting like so:
Now using washed hands or latex gloves (that’s me folks) shmear the chicken with the sauce ingredients till all is blended and well coated like so:
Now pop the chix into the preheated oven and roast for 1 hour to 1 hour 10 minutes or till golden brown and when pierced with a wooden toothpick in the center the juices run yellow not red or pink. This is deliciously saucy so make sure you’ve got either rice or mashed potatoes, bulgur or couscous to sop up the liquid. Fast enough for you? Delish!
