Caramelized Sweet Potatoes

If you are a sweet potato fan, like me, then you know there are myriad ways of preparing this delicious root veg and I play around with them all the time. This is an incredibly simple method of preparing them but the taste is sublime since this is a savory sweet potato dish no added sweeteners at all. The natural sweetness of the batata as it’s known in Israel is enhanced by a few simple ingredients and you roast them till tender in the oven.

So gather the few necessary ingredients and onward!

Preheat your oven to 400 F/200 C.

Then scrub your sweet potatoes very well and trim the ends. Cut them in half lengthwise.

Take a rimmed baking sheet and cover with parchment paper. Then, right on the parchment paper, generously drizzle the olive oil and shake right on top the dried rosemary, thyme, onion powder, garlic powder and the salt like so:

Good, now take the halved sweet potatoes cut side down and place into the mixture, sliding them around till the bottom is coated. Now drizzle the olive oil and rest of spices on top and rub into the skins. Keep the sweet potatoes cut side down on the parchment paper on pan. Once the oven is to temp, place baking sheet in the oven and roast about 40 minutes to an hour or till they are nicely caramelized on the cut side and soft when pierced with a wooden toothpick. These are quite addictive in taste and I sometimes have to chase people away from the pan since they’re too happy to just help me “test taste” them.

Caramelized Sweet Potatoes

2 large sweet potatoes, unpeeled

olive oil

2 teaspoons dried thyme

2 teaspoons dried rosemary

2 teaspoons onion powder

2 teaspoons garlic powder

1-2 teaspoons salt

Directions:

Preheat the oven to 400 F/200 C.

Scrub sweet potatoes well and cut lengthwise in half, trimming ends. Take a rimmed baking sheet and cover with parchment paper. Right on parchment paper drizzle olive oil and sprinkle half the spices. Take the halved sweet potatoes, cut side down and swirl in mixture till bottoms are coated. Leave cut side down. Drizzle more oil and the other half of the spices on top of sweet potatoes and rub into skin. Place in hot oven and roast between 40 minutes till an hour or till caramelized on cut sides and tender when pierced with wooden toothpick. Serve hot.
