Super Moist One Bowl Spice Cake

There are days that I find myself wanting a simple slice of cake, redolent with cinnamon and spice that pairs beautifully with a cup of tea or coffee. Of course, if you don’t want to have to ice or frost it it’s gotta be super moist. So this is that cake. It’s adapted from the Classic Kosher Cooking book by Sara Finkel and it’s so good that I made it for Shabbat and it’s gone. It’s two loaves worth and not a crumb left! That’s the best testament you can ask for.

It slices beautifully and freezes well in addition. So let’s get started!

Preheat the oven to 350 F/180 C.

Take two loaf pans and either spray with oil spray or line with parchment paper. Set aside.

Assemble your ingredients. Remember, this is a one bowl cake so make sure the bowl can hold all the ingredients easily and leave room to stir. You can also make it in a mixer.

Start by placing the flour, sugar, baking powder and soda in bowl, adding the spices and lemon zest/peel and mixing.

And mixed.

Now put the oil, eggs, lemon juice and applesauce right in there with dry ingredients.

Whisk all together till smooth, scraping sides and bottom so no pockets of flour are left.

Pour batter evenly distributing between the two loaf pans (or in a 9 x 13 pan) scraping to get it all out and smooth into pan. Bake in hot oven for 45 minutes for the two loaf pans or one hour for the 9 x 13 pan, checking 5 minutes earlier to be sure not to overbake, with wooden toothpick to make sure it comes out clean. Remove from oven and let cool in pans on wire rack. Serve thick slices to everyone’s delight.

Super Moist One Bowl Spice Cake

3 cups (360 grams) flour
2 cups (400 grams) sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
grated peel of one lemon
Juice of a lemon
2 eggs
1 cup (240 grams) oil
2 cups (500 grams) applesauce

Directions:

Preheat oven to 350 F/180 C.

Prepare two loaf pans by spraying with oil spray or lining with parchment paper, OR preparing one 9 x 13 pan the same way.

In a large mixing bowl, place the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, allspice and lemon zest/peel. Whisk together well till combined. Right into same bowl, add the eggs, oil, lemon juice and applesauce and mix till combined and no pockets of flour remain, scraping sides and bottom. Pour batter into prepared pan(s) and smooth. Place into hot oven and bake loaf pans approximately 45 minutes or 9 x 13 for approximately one hour (checking about 5 minutes before with wooden toothpick, should come out clean). Let cool in pans on wire racks.
