Spice Rubbed Chicken

This is a quick and flavorful way to prepare chicken and is amazingly fragrant as it roasts in your oven. It’s very simple, you just gather all the rub ingredients together.

Preheat your oven to 375 F.

Mix it up in a big enough bowl.

Take your cleaned and patted dry chicken (I used chicken drumsticks and thighs attached) and place on a rimmed baking sheet with parchment paper. Spray chicken lightly with oil spray on both sides (or use oil). Take the rub in your hands (you can use gloves for this if you wish) and rub the spice mixture all over the chicken, on the bottom and top, leaving skin side up.

Bake in hot oven for about an hour and twenty minutes, to an hour and thirty minutes or till chicken is crispy and a skewer stuck in chicken has juice run yellow not pink.

The scent is wonderful and don’t be surprised if people ask for seconds.

Spice Rubbed Chicken

1 tablespoons onion powder
2 teaspoons garlic powder
1/2 teaspoon celery salt
1 teaspoon salt
1 tablespoon dried parsley
2 teaspoons dried thyme
2 teaspoons paprika
1/2 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon turmeric
1/2 teaspoon crushed red pepper
1/2 teaspoon black pepper
5-6 whole chicken legs, drumstick and thigh
Spray oil

Directions:

Preheat the oven to 375 F.

Clean the chickens and pat dry. Take a rimmed baking sheet and place a piece of parchment paper on it. Spray the chicken lightly with the oil spray on both sides. Set aside.

In a bowl, mix all the spices together. Take a generous amount and rub into the chickens on top and bottom, leaving chicken skin side up.

Roast for an hour and twenty minutes to an hour and a half or till chicken is crispy and when poked with a wooden skewer the juice runs yellow, not pink. Wonderful with roasted potatoes and a fresh salad.
