Soft Bread Machine Rye Bread

This soft, light, rye sandwich bread is made in the bread machine, freezes beautifully, and is perfect for sandwiches or toast.

Ingredients
  

  • 6 cups (750 grams) All purpose flour
  • 2 cups (250 grams) whole rye flour
  • 3 1/4 cups (770 ml) lukewarm water
  • 2 tablespoons silan or date honey molasses can be used as well
  • 2 tablespoons canola or other mild oil
  • 4 teaspoons salt
  • 1 1/2 tablespoons instant yeast

Method
 

  1. Add the water, silan (date honey or molasses), and yeast to the bread machine. Allow the yeast to proof and bubble for five minutes.
    2. Add the white flour and rye flour.
    3. Place the salt on top of the flours start the Dough cycle. Add the oil as the kneading begins.
    4. After about 5 minutes, check the dough. It should be shaggy but starting to come together. Let dough continue to mix, and check again in about 10 minutes. Dough should be soft, smooth, and just slightly tacky. If it seems dry, add water a tablespoon at a time. If it’s too wet, sprinkle in a tablespoon of flour. Allow the dough cycle to run (about 50 minutes or so). Check on dough to see if it's risen properly. If it's nice and fluffy and when you press into it with your finger the indentation remains, it's ready to be shaped.
    5. Divide into 2 large sandwich loaves OR 3 smaller loaves.
    6. Cover and let rise until almost doubled, about 45 minutes to an hour and 15 minutes depending on the warmth of your kitchen.
    7. Bake at 190°C/375°F 35 - 40 minutes but check after 30 minutes. depending on loaf size, until the loaves are deep golden brown and sound hollow when tapped. After allowing to cool for five minutes, remove from pans and let cool completely on wire rack before slicing or loaf will get gummy. 
    Soft, fluffy, with a hint of a tang, great for everyday sandwiches and divine as a slice of bread and butter.
