Savory Double Honey Sweet Potatoes
I know what you’re thinking…how can this dish be savory if you’re using two kinds of honey? Excellent question! It’s really quite simple. Silan, or date honey has a very deep umami and savory note to it, not really terribly sweet at all, and when you add the sauteed onions to this and the salt, it balances the regular honey beautifully. I prefer not using olive oil in this recipe, you want the delicate notes of the Silan to show up and olive oil tends to overpower the other ingredients. If you make my crockpot caramelized onions, then you will have easy access to ready to roll sauteed onions, otherwise, you will saute the onions first.
So gather your ingredients and preheat your oven to 400 F/200 C.

Scrub those sweet potatoes well (no peeling, yay!). Slice into wedges. Place in large pan (big enough to hold the wedges in one layer) lined with parchment paper and toss with oil and sprinkle with salt on top.

Place pan in preheated oven uncovered, and roast for 30-35 minutes. They will either be mostly done or done, but you will continue cooking a bit.
While the sweet potatoes are cooking, sautee your onion in the oil till medium brown.
Remove sweet potatoes and top with sauteed onions, and drizzle with the silan and the honey.

Place back in oven for about 5-10 minutes longer.
Remove from oven. Sweet potatoes should be gorgeously golden, smell like heaven and be soft when checked with a toothpick.
Savory Double Honey Sweet Potatoes
4 large sweet potatoes unpeeled, scrubbed and sliced into wedges
1 small onion, peeled, chopped
2 tablespoons vegetable oil for onion, 2 tablespoons oil to sprinkle on sweet potatoes
1 teaspoon salt
3 tablespoons Silan or date honey
3 tablespoons honey
Directions:
Preheat oven to 400 F/200 C. Toss sweet potatoes with oil and sprinkle salt on top. Place in one layer on parchment paper lined baking tray. Roast uncovered for 30-35 minutes (they may be fully cooked, check with wooden toothpick). Remove from oven and drizzle silan and honey on sweet potatoes and distribute sautéed onions on top. Continue cooking uncovered for 5-10 minutes more. Check a few wedges for doneness. They should be a beautiful deep golden color.
