Easy Oven Grilled Boneless Chicken Thighs in Sprite Marinade

I don’t generally keep sodas around in my house but I was playing around with marinades for chicken since it’s a blazingly fast protein we love to eat, especially the boneless, skinless thighs aka pargiyot. As I have elsewhere on the blog a fave of this nature, Shamefully Fast and Easy Broiler “Grilled” Pargiot/Boneless, Skinless Chicken Thighs, a crazy fast and easy recipe, this too is fast and easy and succulent. In the heat of summer when you might choose not to grill outdoors or the cold of winter when you huddle in the house for warmth, the grilling takes place in your broiler, easy peasy. You only have to broil the chicken for 7-8 minutes on each side and people, it’s hard to get dinner on the table faster than that. In fact, if you start a pot of rice on the stove 2-3 minutes before you bung these under the broiler Simple Basic White Rice, you have it all done in 16 minutes flat. Toss a few veggies on the plate and bam! you’re done.

So preheat your broiler and gather your ingredients.

Take a bowl and place the sweet chili sauce, silan (or date honey) OR molasses, crushed garlic and rice vinegar in

and pour the Sprite over the lot and stir well. Submerge the boneless, skinless thighs in mixture.

Let marinate for at least 15 minutes – a note. You can actually do this the night before if you like. The chicken can marinate for 24 hours. The flavor intensifies but if you are in a rush, just plunk them in the marinade while you cut up those veggies and prep the rice and preheat the oven and it’s all good. K. Place chicken on foil lined rimmed baking tray and grill on low broil for 7-8 minutes and it should get a nice grilled look to it and flip and grill on the other side 7-8 minutes. Quick and delish.

Easy Oven Grilled Boneless Chicken Thighs in Sprite Marinade

1 bottle 500 mL of Sprite or other lemon/lime carbonated drink about 17 ounces

2 tablespoons sweet chili sauce

2-3 tablespoons Silan or date honey OR molasses

2 tablespoons rice vinegar

2 cloves of crushed garlic (frozen is fine)

8 small skinless boneless chicken thighs

Directions:

Preheat broiler on low broil. In large bowl combine the Sprite with the sweet chili sauce, silan, rice vinegar and garlic. Mix well. Submerge the chicken in the mixture and let marinate at least 15 minutes. Can be marinated (in fridge) up to 24 hours if you wish, the flavor grows more intense. Place chicken on foil lined broiler pan.

Grill under broiler on low broil for 7-8 minutes on each side. This can be served hot or very nice served hot or room temp sliced on a bed of mixed salad greens and sliced tomatoes with vinaigrette.
