And I’m back with a new year of Passover menus! In fact, some family and friends said to me, what?! you’re not posting menus this year?!!! Never fear, I will not let you down. The temptation is to post a million different recipes since you always feel there’s room for more but the truth is, a nice menu is one that’s not insanely overcrowded, if you get me.
This year there is a feeling of a light at the end of a very long tunnel. Corona/Covid has not yet left us alone, but thank G-d, we now have a vaccine and the lockdowns are over (hopefully for good, at least here in Israel) so we feel that we are coming ever more grateful and with hope to our Seder and will be able to celebrate with family.
This year we all have Shabbat before the Seder which doubles up the prep and meals and for us Israelis, it’s unusual to have a two day affair, so it takes some mental adjustment. My overseas brethren have three (3! count ’em!) days to prepare for. So if you see Shabbat meals, that’s correct for this year, anyway.
A note. I am an Ashkenazi Jew and have certain customs from both my home and DH. Not everyone shares the same customs so simply be true to your own and understand that we each have the customs we follow.
One more note. There are other recipes that are kosher for Passover on the blog and are marked as such. Just so you know, it’s worth a little browsing.

Simple and Delicious Stuffed Cabbage
A delicious beginning to your meal and you simply use potato starch instead of the breadcrumbs or matzo meal.
skip the cumin and if you can’t find smoked paprika, just add a bit more regular sweet paprika.
Braised Skillet Red Cabbage with Kabanos Sausage and Apples
If you can’t find KLP craisins, you can sub raisins if you wish.
Pears Poached in Wine and Honey Sauce
if you can’t find star anise, no prob, you can skip it and if no pomegranate syrup, use a teaspoon of jam.

This year we are splitting our menu in 2 parts. Salads and fish and even some dairy for the early morning meal and the meat and sides for later in the day. Fruit and cake in the afternoon so nobody starves till Seder time.
Outrageous GF Carrot Breakfast Muffins
So good and sneak it in with a cup of coffee at the light 1st half of the meal. Ahh, breakfast of champions!
Cheesecake for Dorie
Just skip the crust or sprinkle some ground almonds or walnuts on bottom of the pan. For the two tablespoons of flour, swap it out with two tablespoons kosher for Passover dry vanilla pudding. It adds a kick of vanilla and helps bind the filling.

a personal fave of mine, just skip the dried mustard and smoked paprika if there isn’t any KLP.
So delish I’m planning to serve it twice!

Shamefully Fast and Easy Pargiot
boneless, skinless chicken thighs grilled under broiler in oven – quick, easy and delish, if you can’t get the oil spray for Passover, lightly brush with oil on both sides and use a combo of paprika, salt, pepper, cinnamon, tumeric and mix.
a tangy pickled salad.
A nice change of pace from regular potato kugel. Swap out the flour with 1/4-1/3 cup of potato starch.
I Can’t Believe it’s Gluten Free Chocolate Chip Cookies
Terrific mouthfeel and only 2 eggs! Always a hit with the adults and kids alike.
