Honey BBQ Chicken

Got about 25 or so minutes to make dinner? This is perfect and super delish to boot. I used skinless, boneless chicken thighs to prepare this dish and it was truly fabulous. If you wish to use regular bone in, skin on chicken, I will give you (below) the cook time (longer than skinless, boneless, of course). One of the best parts of this recipe is that the sauce, other than frying the onion, is no cook. So you can throw the whole thing together with a side salad in under half an hour. You could even add hot cooked rice if you put it up first basic white rice .

In the bowl you see my frozen prepared Sauteed Onions, Basic Kitchen Staple (and one cube of bought frozen crushed garlic) which saves so much hassle when you only want a few tablespoons of fried onion but if you don’t have it to hand, peel, chop and saute in oil one medium onion. The frozen onion defrosts quickly. In a large bowl, mix together the fried onion, garlic, dry mustard, honey, garlic powder (yep, use both kinds) onion powder (double onion too), soy sauce, smoked paprika, brown sugar, ketchup and vinegar.

Stir it all up till smooth.

Before you take your chicken and submerge it in the sauce, reserve about a quarter of a cup of the marinade to brush on top of the chicken when it’s nearly done cooking for a gorgeous color (this is to prevent you tainting the sauce with raw chicken juice in it). K. Let the chix sit in the marinade for about 5 minutes. Mind you, if you’re in less of a rush, it’s all to the good to let the chicken sit longer in the sauce. Okey dokey. Onward.

Preheat your broiler to low broil and line a pan with tinfoil, spray lightly with spray oil for ease of cleanup and removing chicken. Place chicken “pretty side” down. What I mean by this, is that one side of the skinless, boneless chicken is smooth and the other side is rough looking. We want it aesthetically appealiing, so you do it that way. Now place the chicken in the oven and broil for about 7-8 minutes or till chicken is browned somewhat. Remove chicken from oven and flip over. Then take that reserved sauce and generously slather over top of chicken.

Broil chicken on this side an additional 7-8 minutes or until cooked through and beautifully browned. Serve with rice and a salad for a lovely, complete meal.

Honey BBQ Chicken

3 tablespoons fried onions OR one medium onion peeled, chopped and fried in 1-2 tablespoons oil

1 clove crushed garlic (can be frozen)

1 /2 teaspoon dry mustard

2 tablespoons honey

1 teaspoon granulated garlic

1 teaspoon onion powder

2 tablespoons soy sauce

1 teaspoon smoked paprika

3/4 cup (165 grams) brown sugar

3/4 cup (177 grams) ketchup

2 tablespoons vinegar

8 Skinless, boneless chicken thighs

Spray oil

Directions:

Preheat broiler to low broil.

In large bowl, place fried onion, garlic, dry mustard, honey, garlic and onion powder, soy sauce, smoked paprika, brown sugar, ketchup and vinegar. Stir till smooth. Reserve a quarter cup of sauce to brush on chicken. Submerge chicken in sauce and let sit at least 5 minutes but can be left in marinade for several hours (in fridge). Line a broiler pan with tinfoil which you spray with spray oil. Place marinated chicken smooth side down on tinfoil. Broil chicken 7-8 minutes till it starts to brown/char a bit on top. Remove from oven and flip over. Take reserved sauce and slather on top of chicken. Broil other side for an addition 7-8 minutes till chicken is cooked through and a lovely deep color.

A note, if you wish to use the sauce on skin on, bone in chicken, simply marinate chicken (longer than the 5 minutes) and when ready, place on spray oiled, tinfoil lined baking tray and bake at 350 F/180 C covered with foil or a lid for 25 minutes and uncovered 35 minutes or till cooked through and deep brown.
