Avocado Toast with Corned Beef Spread
I’m an avocado lover for many years and have been happy to eat it in guacamole form, sliced etc. etc. The trick with avocados is ripening them to perfection since they tend to either stay hard as rocks or get too soft. A simple brown paper bag used to ripen them can generally do the trick, just test them gently from day to day till they ripen properly.
This particular version of avocado toast came to fruition when I had leftover corned beef from our Shabbat meal and I just didn’t feel like a regular old corned beef sandwich. I eyed my avocados which had successfully ripened on my countertop, and said, hmmm, corned beef/avocado…and eureka, the two combined in my mind. So without further ado, I will show you how to put together this incredible deliciousness which ensued. Btw, should you have any leftover corned beef spread and no more avocado, no worries, it’s awesomeness on its own will prove itself.
So start by gathering your ingredients.
Take a food processor and place the mayo, pickles and mustard in.
Whirl it together till combined and bits of chunky pickle are left.
Next add the corned beef which you’ve sliced or pulled into chunks.
Whirl together, leaving it a bit chunky for extra interest and taste.
Okay, set this aside and prepare your avocado.
Now slice the half avocado right in the peel and use a spoon to release all over and on the bottom.
Good, now it’s time to split a roll, bun or 2 thick slices of bread and toast them. Place on a plate and layer the corned beef spread on first
And last but not least, take the avocado slices and layer them on top of the spread in an overlapping pattern. When you take your first bite, you will swoon with delight!!
Avocado Toast with Corned Beef Spread
2 heaping tablespoons real mayonnaise
1 teaspoon brown mustard
1-2 pickles in brine
3 thick slices corned beef about 3-4 ounces or around 100 grams
1/2 – 1 ripe avocado
2 sandwich buns/rolls/thick sliced bread sliced in half and toasted
This serves 2 people with extra generous corned beef spread
Directions:
Prepare the corned beef spread by placing the mayo, mustard and pickles in a food processor. Whirl till pickles are chunky bits. Pull or slice the corned beef into chunks and whirl with mayo sauce till corned beef is incorporated and spread is chunky. Set aside. Take avocado and slice in half, remove pit and in the peel, slice in slices and release all about and beneath with a spoon. Take the toasted buns/rolls/thick sliced bread and place on a plate. Thickly spread corned beef spread on toasted bun and top with the slices of avocado which you overlap on spread. Nice served with a pickle and some sliced cherry tomatoes.
