So it’s that time of year again, Passover is rolling around and I have been asked by many to prepare a menu list.  Honestly? It’s good for me as well since it helps me focus on what I want to serve this year.  I have certain regular items that are so simple and are featured on previous Passover posts for the recipes.  But I’ve found that some people would like a different type of menu, some are looking for less expensive meats to cook and some just can’t face another piece of brisket since they’ve done it year after year.

I kinda mixed it up a little, a bit different and I even threw in a vegetarian main dish. I hope you will find some recipes that will ease your prep and may we all go into the holiday healthy and calm and able to enjoy our families and friends.  Chag Sameach to all.

Layl HaSeder Meal

Orange and Wine Poached Salmon

A wonderful and refreshing combination of flavors.  If you can use fresh orange juice, great, maybe grate in a little zest for added flavor.

Daniella’s Orange Soup (Marak Katom)

This is a creamy soup with no cream – dairy or otherwise – in it and is made with orange veggies and it’s vegetarian as well.  A nice change from chicken soup.

Chicken Paprikash

This is perfect for Seder night, cooked on the stovetop and goes beautifully with mashed potatoes.

Stuffed Eggplant With Ground Beef

Sort of an easier version of moussaka, this is a big favorite.

Vegetable Frittata with Mushrooms and Onions and Potatoes and Spinach

Skip the cheese to keep non-dairy and you have a nice vegetarian option or a light side dish.

Saba David’s Cucumber salad

This goes especially well with the Chicken Paprikash and is light and flavorful.

Mashed Potatoes  I don’t give you a recipe for this, but it goes with the Paprikash perfectly.

Did I say divine? Yes I did.  It’s a must have.

Portabello Mushrooms Stuffed with Ground Chicken (Gluten Free)

These are lovely plated but can also be put on a family style platter and passed around.  They are lighter because they’re made with ground chicken but are flavorful!

Quick N Easy Marmalade Chicken

It doesn’t get easier than this!  Mix sauteed onion and orange jam and bam, you have a taste sensation!

Oven BBQ Short Ribs- Flanken Cut

Succulent and simple with roast potatoes on the side.  If you can’t find roasting bags for Passover, place in pan and tightly cover with foil.

Eggplant and Red Pepper Salad, Oven Roasted

tasty and a colorful salad for your table.

Hassleback Salami Potatoes

A little different and fun to eat.

Oven Fried Sweet Potato Cubes in Sweet Chili Sauce and Sesame Seeds  Just skip the sesame seeds in this recipe – still a winner and easy peasy
