Lip Smacking Fruit Smoothies
So as I’ve mentioned, DH and I just purchased a high speed blender which blends with amazing results when making gazpacho Gazpacho a la Estrella obviating the need to peel the tomatoes (can we have an amen to this? yayayay!), so we said to each other, this thing is born to make smoothies and we had all this lovely summer fruit with a bit of a wilt going on.
I made a deal with DH, you wash the fruit, I’ll make the smoothies. And we were a go.
Now he wants to keep the Ninja non-dairy since gazpacho is his middle name, so I decided not to go with a milk substitute but to eschew this completely and go for a juice based smoothie instead. After all, the orange juice I wanted to use would add a lot of flavor, so I was ready to blend.
Take your washed fruit – now this was a really interesting combo. I had a pink lady apple batting its eyelashes at me from the fridge. Hey, no peeling, DH insisted, remember the tomatoes! So I nervously didn’t peel it. Then some luscious but slightly limp (ya know what I mean?) grapes and a nectarine. All unpeeled but the bigger fruit just chunked, grapes went in au naturel. On the bottom is one cup of ice.
Pour in your juice, and give a quick blend, like a pulse, stop. Do this three times (and click your heels together Dorothy) and then a longer blend for the home stretch.
This produced a thick, creamy, icy cold smoothie with no hint of a peel, that was so delicious we were hooked. It’s perfect to use up those slightly wilted looking fruits in your fridge and you have a delicious combo drink. Who knows what we’ll come up with next. L’Chaim!
Lip Smacking Fruit Smoothies
2 cups purple grapes
1 large nectarine
1 large pink lady apple (or other variety, that’s what we had to hand)
1 cup ice cubes
1 cup orange juice
Wash all your fruits and cut up the apple and the nectarine into chunks removing seeds and core. Set aside.
Take out your hi speed blender and first put in the ice cubes, then put in the fruit and lastly put in the orange juice. Pulse and stop three times and then blend till thick and all ingredients are blended into an emulsion. Pour into 3 nice sized glasses and serve. Wonderfully refreshing!
