Copycat Bone Suckin’ Sauce

In Jerusalem, you can’t always find specific condiments you want but generally, there are specialty stores that carry ingredients you cannot find elsewhere. I spotted the Bone Suckin’ Sauce on the shelf of a local shop and decided that it looked wicked good and would give it a shot.

It was awesome and DH (astonishingly, since it has vinegar in it) loved it and of course, I immediately decided to deconstruct it since sometimes the shop will carry it and sometimes not. So, it was worth the effort to copy it, a sign of sincere appreciation!

Now what’s great about this marinade/sauce is that it works fabulously on chicken, “ribs” (flanken) and practically cornflakes it’s so delish (no not really 😉 ). So it’s totally worth making in quantity and the recipe can be doubled for sure. It should keep quite well for at least a week in the fridge and if you are nervous that it won’t last longer (never needed it to since I use it all up), it will freeze very well indeed. Just apportion it for however much chicken/ribs/whathaveyou you will need.

Now don’t freak out at the long list of ingredients. Most of these you should have in your home since they are fairly basic and if you don’t have molasses say, it’s worth the investment since many sauces use it and it keeps for a long time. The many ingredients aside, this is all put in one pot and cooked for about 10-15 minutes till it all melds together into a sauce. Then you let it cool and slather generously on chicken or ribs. I used it on chicken for Shabbat and asked DH his opinion of the chicken (not telling him the Bone Suckin’ Sauce was my own creation) and he said, “Excellent!” I then, of course, told him it was my copycat version and he actually said, ya know, I thought it was different but I actually like it better! Wow, enough said. 🙂

So sautee your onion in a bit of oil, add garlic and cook for 30 seconds and then one after the other, add all the ingredients. Don’t you love that?

Copycat Bone Suckin’ Sauce

2 cloves garlic peeled, chopped
2 tablespoons vegetable oil, like canola
1 tablespoon sweet chili sauce
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground ginger
1/2 teaspoon crushed hot red pepper
1 teaspoon grated orange zest
1/4 cup fresh orange juice
1 tablespoon lemon juice
1/3 cup apple cider vinegar
1/3 cup soy sauce
1/2 cup tomato paste
1/3 cup honey
1/4 cup maple syrup
2 tablespoons molasses
2 tablespoons Dijon mustard OR 1/2-1 flat teaspoon mustard powder

Take a medium pot and saute the chopped onion in the oil till light brown, add the chopped garlic and cook for about 30 seconds in the oil. I mean this literally, garlic burns incredibly quickly and it will give your sauce a bitter, nasty flavor. You are continuing to cook it in the sauce so it will add depth of flavor. Now add the sweet chili sauce, all the spices and all the rest of the ingredients. Cook 10-15 minutes till thickened (this is liquidy thick, not stand a spoon up in it) and cool to use as marinade and sauce. Slather generously on chicken and ribs, also works beautifully on roasts.
